Hi,

A woman with long brown hair, wearing a white sleeveless top, white pants, and white high-heeled sandals, sitting on a black and wooden chair in a room with hardwood floor and beige wall, looking to the side with her hand touching her neck.

I’m Olesia

Holistic Culinary Diploma Program

From a childhood in Ukraine, to studying culinary arts in Paris, to cooking in Michelin-starred kitchens in NYC…my journey with food & nutrition has been far from linear.

I grew up in Ukraine, where food was simple, whole, and nourishing.

This didn’t, however, stop me from falling into the trap of fad diets and unrealistic beauty standards.

What started as "healthy eating" turned into an eating disorder, amenorrhea, anxiety, and a cycle of restriction and shame.

At 22, I left my journalism career to study culinary arts at Le Cordon Bleu in Paris.

From there, I cooked in Michelin-starred kitchens in New York, opened a cake atelier, dabbled in real estate…and completely burned out.

Years of high stress, living on autopilot, and undernourishment left me with gut issues, blood sugar imbalance, and a nervous system crash that conventional medicine had no answers for.

Eventually, I was I was diagnosed with Persistent Postural-Perceptual Dizziness (PPPD)—a not-so-rare-(anymore) chronic condition rooted in nervous system oversensitization.

Every single day, I dealt with constant dizziness, brain fog, head pressure, and sudden energy lapses.

It was the most confusing and traumatic thing I’ve ever experienced.

Doctors told me I’d have to “learn to live with it.”

I felt lost & hopeless.

But I refused to give up.

It became my life’s mission to understand my body and heal. And it took four years, but I did.

Throughout my journey, I learned that healing is never just one thing — it’s a balance of physical, emotional, and psychological changes.

No magic fix, just a gradual, layered transformation.

Eventually, I pursued formal training as a Registered Holistic Nutritionist, followed by a certification in Nutrition Coaching.

I learned how food, stress, trauma, sleep, mindset, and environment work together — and how to help others connect those dots.

Then one day, I finally found the missing piece to my healing.

DNA testing helped me uncover key genetic quirks that explained why my nervous system was so reactive, and small changes I could make to boost my stress resilience and feel like myself again.

Today, I combine my background in science, culinary arts, and coaching to support healing from the inside out.

I specialize in mindful weight loss and personalized nutrition based on DNA and functional testing, helping clients understand their bodies and create change that lasts.

YOU DON’T HAVE TO

DO THIS ALONE.

My own health journey was often frustrating and isolating. Yours doesn’t have to be.

As a Registered Holistic Nutritionist, I help people in Vancouver and around the world feel less alone.

My approach is warm, realistic, and empowering. I believe that balance is everything.

True health isn’t about controlling every bite. It’s about finally feeling safe, strong, and at home in your body.

Olesia is just brilliant — French-trained chef, she’s a queen of flavour! Olesia’s recipes are the only way for me to actually stick to a low-carb diet — because I actually enjoy the meals!

THIS IS HOW I DO IT

SCIENCE. CREATIVITY. COMPASSION.

Restrictive diets? Not for me. Band-aid fixes or “hacks?” Not happening here. Boring meal plans that don’t suit your culture or lifestyle? No, thank you.

My approach to nutrition and wellness is unique: not only do I have a background as a trained chef, but I’m one of few nutritionists trained in nutrigenomics, AKA genetic-based health.
